Venue Manager
The Venue Manager is responsible for the day-to-day leadership, operation and performance of the Exchange Hotel, acting as the key operational leader across the venue.
Full Time
$100,00 per year
Reporting directly to the Owner /Director, the Venue Manager will lead the venue leadership team, oversee staffing, rostering and labour, drive customer experience and venue standards, manage compliance and operational systems, and work closely with the Head Chef to deliver strong food, beverage, functions and gaming performance.
This role carries genuine operational authority and accountability. The successful candidate will be expected to make day-to-day decisions, hold leaders and staff accountable, drive execution, manage labour and productivity, and ensure the venue consistently delivers against agreed financial, operational and cultural goals.
A key objective of the role is to reduce owner dependency by taking full ownership of daily operations, allowing the Owner /Director to focus on strategy, systems, growth, profitability and the future redevelopment of the business.
We are looking for an experienced Venue Manager, Assistant Venue Manager, Operations Manager or senior hospitality leader who is ready to step up, take ownership and lead a substantial independent hotel business.
Duty Manager / Senior Duty Manager

The Exchange Hotel is strengthening its leadership team and is looking for an experienced Duty Manager or Senior Duty Manager to join us.
This role would suit an experienced hospitality leader who enjoys being on the floor, leading a team and taking responsibility for running great services.
It could also be an excellent opportunity for an ambitious Duty Manager who wants to develop towards senior venue management in the future.
THE ROLE
As part of our venue leadership team, you will be responsible for:
- Leading venue operations during your shifts
- Supporting and directing front-of-house staff
- Delivering strong customer service and venue standards
- Managing busy food, beverage and entertainment periods
- Opening and closing the venue
- Cash handling and end-of-shift procedures
- RSA, gaming and venue compliance
- Managing customer issues professionally
- Supporting staff training and development
- Working closely with the Venue Manager and other department leaders
You won’t simply be carrying keys.
We want our Duty Managers to lead the venue when they are in charge.
WHO WE’RE LOOKING FOR
Ideally you will have experience as a:
- Duty Manager
- Assistant Manager
- Bar Manager
- Restaurant Supervisor/Manager
- Senior hospitality supervisor ready for the next step
You’ll need to be:
- Reliable
- Confident leading people
- Calm under pressure
- Comfortable making decisions
- Customer focused
- Organised
- Available across evenings and weekends
RSA is required and gaming experience would be highly regarded.

Chef / Experienced Cook
Approx. 25–30+ consistent hours per week working alongside Head Chef Craig and the Murray’s BBQ & Bar kitchen team.
This isn’t a casual role offering the occasional fill-in shift.
We’re looking for someone who wants consistent weekly hours and a regular place in our kitchen team.
Working alongside Head Chef Craig Gustavsson, you’ll be involved across:
- Smokehouse and modern pub food’
- Grill and service
- High-volume weekend services
- Functions and events
- Preparation and kitchen operations
- Maintaining strong food quality and presentation standards
WHAT WE OFFER
- Approx. 25–30+ consistent hours every week
